I had a bunch of over ripe bananas sitting on the kitchen counter for well over a week while I kept debating whether or not I was actually going to bake the banana bread I had been promising to make. On Friday, when they were now inviting far more fruit flies than are ever welcome in my kitchen, I psyched myself up and pulled out the MagiMix. It’s not that I don’t enjoy baking, far from it in fact – I love to bake – but much to my husband’s dismay, it’s been a while since I was last barefoot in the kitchen and needed a bit of a push to find my groove again. But this recipe is so quick and easy that it probably took me all of 5 minutes from mixing it up to having it baking in the oven! It definitely needed a couple tweaks as I’m still getting used to my oven for baking but it was surprisingly tasty. So as promised, here is my ridiculously easy Banana Bread recipe I swiped from my mom a few years ago 🙂
Ingredients:
- 4 ripe bananas
- 2 eggs
- 1 teaspoon baking powder
- 3/4 teaspoon bicarb
- 125g butter
- 300g sugar
- 300g flour
Method:
- Puree bananas until smooth
- Cream butter and sugar together
- Mix in eggs, one at a time
- Add bananas, flour, baking powder and bicarb (mixed in water) and mix together well
- Pour mixture into a well greased loaf tin
- Bake at 180 degrees for 1 – 1.1/4 hours (my oven is a bit hot so next time I would bake at 170 for just under an hour)
This makes the perfect treat for anytime of day – with your morning coffee or afternoon tea, with butter or without. It really is delicious – and since it has bananas, it definitely counts as one of your five a day 😉
