Recipe: Blueberry Muffins

If there’s one recipe that makes me nostalgic, it’s this one. The smell of these delicious blueberry muffins takes me straight back to my Granny’s kitchen – breaking open the soft, fresh-out-the oven muffins, inhaling the delicious fragrance of freshly baked treats and gobbling them up while the blueberries were still warm and gooey. Scent for me is my most powerful of senses and it’s one that always evokes the clearest of memories. Raw cookie mixture reminds me of sitting on the kitchen counter ‘helping’ my mom bake cupcakes before getting the spoon to lick. These are all memories and traditions that I hope to pass on to Oliver so the last few times I’ve baked, I’ve made sure to let him get involved (not that I really have much option at the point!) But I let him sit on the kitchen counter and stir and of course lick the spoon 🙂 And one day maybe he too will catch a whiff of a freshly baked cupcake and remember sitting on the kitchen counter helping me bake.

This recipe is straight from my Granny’s handwritten recipe book and one she chose to share in the recipe book my bridesmaids put together before I got married. So here is an incredibly special piece of my heart that is bound to steal your heart!

Recipe: Blueberry Muffins

You can do a few variations of these with blueberries, raspberries or strawberries. My favourite is blueberry but this time I used raspberries and they were so delicious!

Ingredients:

  • 125g caster sugar
  • 1 Tbsp grated lemon zest
  • 265g plain flour
  • 1 Tbsp baking powder
  • 2 lightly beaten eggs
  • 225ml milk
  • 115g unsalted butter (melted)
  • 1 tsp vanilla essence
  • 225g fresh or frozen, thawed blueberries

Method:

  1. Preheat oven to 200 degrees Celsius
  2. Stir flour, sugar, lemon zest and baking powder together
  3. Beat eggs, milk, butter and vanilla essence together with electric whisk until smooth
  4. Add dry ingredients and whisk for 1 minute
  5. Stir in blueberries
  6. Spoon batter into muffin cases
  7. Bake for 20 minutes

Enjoy fresh out the oven with a hot cup of tea or as a mid-morning treat with your cup of coffee. Also delicious when you pop it in the microwave for about 20 seconds!
