Recipe: Crunchy Lemon Squares

The last few weeks have been a bit of blur of busyness and I feel like I am VERY far behind on blogging with lots of posts just waiting to come to life. I can’t really pinpoint why it’s all been a little hectic but life in general seems to have picked up speed. And the frightening thing is, September is a mere two weeks away where the months seem to simply melt away and all of a sudden it’s Christmas morning! But September does bring the promise of warmer weather and brighter mornings which definitely puts a little spring in my step! I don’t know about you, but while I have loved the rain, I feel like this has been a very long, cold winter, full of lots of germs and nasty bugs.

There’s nothing a cup of tea and a sweet treat can’t fix though, so I’ve been making more of an effort to get back to baking. Oliver is also at an age now where he wants to help me with everything and baking is such a fun activity to get him involved in. These Crunchy Lemon Squares are ridiculously quick and easy to make so they are a good one to make with little helping hands – and they are dangerously delicious! This is my mom’s recipe and one she used to make for us all the time so it always makes me feel a little nostalgic 🙂


  • 100g soft margarine
  • 150g self-raising flour
  • 5ml baking powder
  • 150g caster sugar
  • 2 large eggs
  • Finely grated zest of one lemon
  • 60ml milk
  • Icing:
    • Juice of 1 lemon
    • 100g granulated sugar


  1. Mix all the ingredients together in a bowl (literally throw them all in together and mix!)
  2. Line a square baking tin with grease proof paper
  3. Pour in the mix and bake at 180 degrees for about 50 minutes until pale golden and slightly shrunken from the sides of the tin (my oven took slightly over 40 minutes)
  4. Stir the lemon juice and sugar together for icing
  5. Pour over the lemon and sugar mix while the cake is still hot so that it soaks in
  6. Cut into squares once cooled – makes approximately 12 sqaures

It’s that easy! This makes a nice desert served with custard and kept in a Tupperware, they last about a week – perfect for that afternoon cup of tea 🙂
